Vegan Protein Bowl

Savory cooked Quinoa, Chickpeas, and Roasted Red Peppers served over fresh greens seasoned with Spicy Vegan Cashew Dressing. A simple dish rich with fragrant spice and amazing flavor. Healthy, flavorful, and vegan - this Vegan Protein Bowl is a delicious combo the whole family will love!

Ingredients:

  • 1 Cup Baby Spinach

  • 5 Cherry Tomatoes (cut in half)

  • 1/2 Large Cucumber (cut in moon shapes)

  • 1/2 Cup Cooked Quinoa

  • 1/2 Large Avocado

  • 1/4 Cup Cooked Chickpeas

  • 1/4 Cup Roasted Red Peppers

  • A Sprinkle of Everything But the Bagel Seasoning

  • 1/4 Cup Vegan Cashew Dressing (I added some chili to this batch and it really hit the spot)

Method:

  • Starting with the spinach layer the veggies in a salad bowl or plate.

  • Smother in Vegan Cashew Dressing or other dressing of choice.
