Ingredients:
1 Cup Baby Spinach
5 Cherry Tomatoes (cut in half)
1/2 Large Cucumber (cut in moon shapes)
1/2 Cup Cooked Quinoa
1/2 Large Avocado
1/4 Cup Cooked Chickpeas
1/4 Cup Roasted Red Peppers
A Sprinkle of Everything But the Bagel Seasoning
1/4 Cup Vegan Cashew Dressing (I added some chili to this batch and it really hit the spot)
Method:
Starting with the spinach layer the veggies in a salad bowl or plate.
Smother in Vegan Cashew Dressing or other dressing of choice.
