This Refreshing Hearts of Palm Salad, is a real crowd pleaser! It's the PERFECT combination of light yet filling. Great for Shabbos Lunch, BBQ’s, and more!
Ingredients:
2 Fourteen Ounce Cans Hearts of Palm
3 Ten Ounce Containers Cherry Tomatoes
2 Extra Large Avocados
1 Medium Sweet Onion
1 Bunch Fresh Cilantro
Juice from 1 Lemon
Salt & Pepper to Taste
Method:
Dice the Hearts of Palm, Cherry Tomatoes, & Onion into small pieces, add to a large bowl.
Cube the Avocado & add to the bowl.
Lastly add the Fresh Cilantro, Lemon Juice, Spices, and toss lightly to combine. Enjoy! tried this recipe? don't forget to drop a comment and photo below!
I hate cilantro so I subbed in parsley, and it was wonderful. I also added some diced jicama for the crunch as the taste blended in nicely with the rest of the ingredients. Going to try it stuffed into hollowed out beefsteak tomatoes next time around =)
