This super soft & moist cake is a crowd pleaser; it is not uncommon to see guests going back for seconds. It is a piece of heaven on a plate, if I may say so myself!
Ingredients:
2 Cups Almond Flour
1 Tablespoon Baking Powder
3/4 Cup Vegan Yogurt (standard Greek yogurt can be used for non-vegans)
1/2 Cup Applesauce
1/3 Cup Stevia or Granulated Sweetener of Choice
1/3 Cup Melted Coconut Oil
½ Cup Pecans
Optional Candied Pecans or Pecan Pie Filling for topping.
Method:
Add the Yogurt, Applesauce, Sugar, & Coconut Oil to a bowl, and mix well.
Once there are no clumps leftover, add the Almond Flour & Baking Powder giving it a final mix.
Fold in the Pecans.
Transfer to a loaf pan and bake at 350°F for one hour.
Remove from oven, let it cool off for one hour, decorate, slice, & enjoy! tried this recipe? don't forget to drop a comment and photo below!
