These Veggie Rolls are so easy to put together; they make for a perfect appetizer or snack!
Ingredients:
2 Big Romaine Lettuce Leaves
½ Cup Riced Cauliflower
¼ of a Baked Sweet Potato (cut into strips)
½ Red Bell Pepper (cut into strips)
½ Large English Cucumber (cut into strips)
½ Avocado (cut into strips)
Method:
Place the seaweed on a Parchment paper, Cutting Board, or any Flat Surface.
Add the Lettuce Leaf in the Center
Add a few Tablespoons of Cauliflower Rice in the center of the Lettuce.
Layer the rest of the cut up veggie strips in the order of your choice.
Roll the Seaweed Paper tightly and let it sit for 2 minutes.
Using a sharp knife, cut the center of the roll.
