A yummy fruit bread filled with berries galore, no refined sugars, artificial flavorings or white flour. Perfect for breakfast or as an afternoon snack with tea.
Ingredients:
1 Cup Organic Fresh Raspberries
1 Cup Organic Fresh Blueberries
1 Cup Jam of Choice
1 ½ Cups Medjool Dates (packed)
1 ½ Cups Water
1 ¾ Cups Gluten Free Oat Flour
1 ½ Tablespoons Baking Powder
Method:
In a blender or food processor; combine the water and dates, blend until smooth.
Add the Oat Flour, Baking Powder and blend.
Fold in the berries and combine well. **overmixing will result in squashing all the berries so mix carefully.**
Divide in 2 small loaf pans or one larger one and bake at 350°F for 50 minutes.
