Loaded with fresh apples, cinnamon, and crunchy walnuts, this moist and flavorful cake is the perfect easy dessert. A holiday and fall favorite!
Cake Ingredients:
8 Ounces Unsweetened Apple Sauce
½ Cup Apple Juice
1 Tablespoon Apple Cider Vinegar
¼ Cup Almond Milk
⅓ Cup Maple Syrup
½ Tablespoon Vanilla Extract
2 Cups Oat Flour
¼ Cup Coconut Sugar
¾ Tablespoon Ground Cinnamon
1 Tablespoon Ground Flaxseeds
½ Teaspoon Baking Soda
2 Teaspoons Baking Powder
¼ Teaspoon Ground Ginger
Topping Ingredients:
2 Medium Red Apples
2 Teaspoons Ground Cinnamon
½ Cup Crushed Walnuts
¼ Cup Maple Syrup
½ Cup Dairy Free Vanilla Yogurt
Method:
Combine the Oat Flour, Cinnamon, Ginger, Flaxseeds, Coconut Sugar, Baking Powder & Baking Soda in a large mixing bowl. Mix well and set aside.
In a separate bowl, combine the Applesauce, Apple Juice, Almond Milk, Maple Syrup, Vanilla, and Apple Cider Vinegar, mix well.
Combine the wet and dry batters and mix until no clumps remain.
Add to a prepared round pan and bake at 350°F for 40 minutes.
Cut the apples into small bite sized pieces and combine with the Chopped Walnuts, Maple Syrup, and Cinnamon. Mix well.
Remove the cake from oven and let it cool off before adding the topping.
