This salad is made with hearty grains, fresh vegetables, and a creamy dressing for a simple but delicious salad that will keep you feeling full. This salad can be enjoyed for lunch, as an appetizer, or side dish.
Salad Ingredients:
2 Cups Cooked Einkorn Wheat Berries
1 Head Romaine Lettuce - shredded
2 Cups Cherry Tomatoes - cut in half
1 Scallion - diced
½ Red Onion - finely chopped
½ Cup Parsley - chopped
½ Cup Black Olives - cut in half
Dressing Ingredients:
¼ Cup Extra Virgin Cold Pressed Olive Oil
¼ Cup Tahini
2 Tablespoons Filtered Water (more water may be added for a runnier consistency)
2 Tablespoons Lemon Juice
1 Tablespoon Dijon Mustard
1 Tablespoon Maple or Date Syrup
Salt and Pepper to taste
Method:
Whisk the dressing ingredients together in a small bowl or jar and set aside.
Finely chop the vegetables and olives.
Add all the vegetables to a large salad bowl along with the wheat berries and toss to combine.
