Earthy, juicy, red beets combined with fresh herbs and olive oil makes up an irresistible and refreshing salad that you can enjoy as a side, or make a light meal out of.
Ingredients:
9oz Cooked Red Beets
1/2 Medium Sweet Onion
1 Medium Garlic Clove (minced)
1 Handful Curly Parsley (chopped)
1/4 Cup Extra Virgin Olive Oil
1 Teaspoon Salt
1 Teaspoon Dried Basil
Method:
Cut the beets into small cubes and add to a medium mixing bowl.
Chop the onions into small pieces and add to the bowl with the beets.
Add in chopped parsley, minced garlic, olive oil, basil and salt and mix well.
