A Chocoholics dream - these Gluten Free Chocolate Chunk Tahini Muffins are incredibly rich and delicious, loaded with chocolate chips in every single bite! These muffins are naturally sweetened and contain no oil, gluten, eggs, or dairy.
Ingredients:
1 Cup Almond Milk
1 Teaspoon Vanilla Extract
1 ¼ Cup Gluten Free Flour Blend
2/3 Cup Organic Coconut Sugar
1/3 Cup Dark Cacao Powder
2 Teaspoons Baking Powder
1 Cup Vegan Dark Chocolate Chips
Method:
Add the Gluten Free Flour Blend, Coconut Sugar, Cacao, and Baking Powder to a mixing bowl, combine and set aside.
In a separate bowl, combine the Almond Milk, Tahini, and Vanilla Extract.
Add your wet to the dry ingredients and gently combine.
Fold in the Dark Chocolate Chips.
Divide between 6 Jumbo Muffins or 12 Standard Size Muffins.
Bake at 350ºF for 25-30 Minutes.
