These Choco Chunk Oat Bran Cookies are a true delight! They are soft, chewy, and slightly crunchy, giving way to rich, velvety chocolate in every bite. Ingredients:
1 ½ Cups Organic High Fiber Oat Bran
½ Cup Organic Coconut Sugar
½ Cup Organic Almond Flour
2 Teaspoons Baking Powder
½ Cup Avocado Oil
¼ Cup Oat Milk
2 Tablespoons Bourbon Barrel Aged Maple Syrup
1 Teaspoon Vanilla
½ Cup Chopped Pecans
½ Cup Chocolate Gems
Method:
In a bowl combine the Oat Bran, Coconut Sugar, Almond Flour, and Baking Powder.
Form a well in the center and add the Avocado Oil, Oat Milk, Maple Syrup, and Vanilla. Mix well.
Lastly add in the chocolate chunks and pecans.
Scoop out about 10 Cookies on a prepared cookie sheet, flatten slightly.
Bake in a preheated oven at 350°F for 14 Minutes.
