This Healthy Chickpea Salad is made with Chickpeas, Crunchy Celery, Bell Pepper, and Extra Creamy Vegan Mayo! It is easily customizable, I layered it with Sweet Potato and Greens but add in anything else you fancy; it is the perfect salad for a sandwich, wrap, or to eat with crackers!
Ingredients
2 Slices Whole Wheat Bread
1/4 Cup Fresh Spinach
1/4 Cup Mashed Sweet Potato (optional)
2 Cups Cooked Chickpeas
1/2 Cup Diced Celery
1/2 Cup Diced Red Bell Pepper
1/2 Cup Vegan Mayonnaise
1 Tablespoon Fresh Chopped Dill
Salt, Pepper, & Garlic Powder to taste.
Method:
Mash the Chickpeas with a potato masher or large fork.
Add the Celery, Onion, Red Bell Pepper, Mayo, and Spices.
Mix to combine well.
