A delicious pasta salad loaded with healthy greens, brown rice pasta, and herbs all covered in a smooth and creamy dressing. It’s perfect on its own, or as a side dish to any dinner!
Ingredients:
3 Medium Ripe Avocados
4 Cups Fresh Baby Kale
1/2 Cup Extra Virgin Olive Oil
2-3 Cloves Garlic
1/4 Cup Water
Juice of 1 Lemon or Lime
Salt & Pepper to taste
4 Cups Cooked & Drained Gluten Free Brown Rice Pasta
Sesame Seeds and Cilantro to Garnish
Method:
Add the Avocado, Kale, Oil, Garlic, Water, Lemon, Salt & Pepper to a high speed blender or food processor and blend until smooth.
Combine with the Cooked Pasta.
