Avocado Kale Pasta Salad

A delicious pasta salad loaded with healthy greens, brown rice pasta, and herbs all covered in a smooth and creamy dressing. It’s perfect on its own, or as a side dish to any dinner!

Ingredients:

  • 3 Medium Ripe Avocados

  • 4 Cups Fresh Baby Kale

  • 1/2 Cup Extra Virgin Olive Oil

  • 2-3 Cloves Garlic

  • 1/4 Cup Water

  • Juice of 1 Lemon or Lime

  • Salt & Pepper to taste

  • 4 Cups Cooked & Drained Gluten Free Brown Rice Pasta

  • Sesame Seeds and Cilantro to Garnish

Method:

  • Add the Avocado, Kale, Oil, Garlic, Water, Lemon, Salt & Pepper to a high speed blender or food processor and blend until smooth.

  • Combine with the Cooked Pasta.
